
Dimple Jethani is chief information officer at Aramark Destinations, where she spearheads the modernization of core enterprise platforms for the lodging, recreation, food and beverage and retail spaces. complex transformations that reimagine how organizations connect with guests and employees. Previously, she led digital reinvention at Norwegian Cruise Line Holdings, earning recognition as a “Top 10 Travel & Hospitality Leader” and South Florida ORBIE Global CIO finalist.

This ecosystem consists of forward-thinking initiatives like Project X, which unifies booking and on-property operations under a single, flexible framework. “From remote parks to seasonal operations, the diversity of our portfolio demands adaptability,” Jethani explained. “We’re building API-first platforms that simplify operations, enable property-level customization, and deliver intuitive tools for our teams. What makes me proud is the discipline behind the roadmap: business leaders at the table, clear success measures and a rollout that respects local realities while driving toward a common backbone.”
The experience-driven vision of Project X is complemented by Aramark’s Martech strategy. With a Customer Data Platform at its core, the Martech stack is designed to unlock the insights that power personalized and relevant marketing, anticipating needs and creating meaningful touchpoints throughout the guest journey. “The strength of this stack lies in its ability to unify guest data, content and analytics so that every interaction is informed by what we know about the individual,” Jethani said. “The platform’s vision for a unified data and content environment, where every message is relevant and timely, aligns perfectly with our strategy and our commitment to putting people at the center of every experience. Together, Project X and Martech will redefine how we connect with guests, blending data-driven intelligence with human-centric design. And we’re building for agility, knowing that AI, advanced search and new booking models are reshaping hospitality at unprecedented speeds.”
Over the next two years, Jethani and her team will pilot and refine Project X across diverse property types, scale to standardize guest and operator workflows, remove friction from booking through fulfillment and ensure a seamless journey at every touchpoint to support personalized marketing, targeted cross-sell and up-sell, and closed-loop measurement.
“We’re building flexible, future-ready platforms and fostering strategic partnerships that will enable us to adapt quickly as AI, LLMs and new booking and engagement models emerge — ensuring we’re always prepared to meet evolving guest expectations,” Jethani says.
